Butter Murukku

Murukku is a crispy, deep fried savoury snack prepared especially during festivals such as Diwali or Janmashtami.

The main ingredient for murukku is rice flour which is typically combined with either besan or urad dal flour. However, to make it more soft and tasty, butter is added while mixing and hence the name butter murukku is derived.

In this particular case, the texture of the dough is different from that of the spiral murukku, and is supposed to break off at intervals when pressed from the mould.

The mould in question typically has a star shaped cut out, giving rise to the peculiar texture of this snack food.
